  • 2 tablespoons honey or maple syrup (optional, mango is naturally sweet)
  • 1-inch piece fresh ginger, peeled (optional)
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)

Instructions:

  1. Add coconut water and coconut milk to the blender first. Add fresh ginger if using, lime juice, lime zest, vanilla, honey if using, and chia seeds if using.
  2. Add fresh mint leaves and chopped cucumber.
  3. Add frozen banana.
  4. Top with frozen mango chunks. Blend on high for 60 seconds until completely smooth. Pour into glasses, garnish with fresh mint sprigs and a slice of lime, and serve immediately.

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.
