These Cosmic Brownie Cookies are a rich, chocolatey blast from the past, inspired by the nostalgic treat everyone loved as a kid. Imagine a soft, chewy brownie in cookie form—fudgy in the middle.

Then top that with colourful rainbow chips to give it that iconic “cosmic” look. It’s fun, indulgent, and surprisingly easy to make. Each cookie holds its shape beautifully while staying soft and rich inside.

The glossy chocolate topping is made with just a few simple ingredients and sets perfectly once cooled. The rainbow candy chips don’t just add colour—they deliver a sweet crunch in every bite.

Whether you're baking for a birthday party, holiday cookie box, or just a treat-yourself moment, these cookies bring both the flavour and the fun. No store-bought box needed—just a handful of pantry staples and a little love.

Bake a batch of these cosmic brownie cookies and watch them disappear like magic. They’re the kind of cookie that makes everyone smile, whether you’re 6 or 60. Slightly crisp on the edges, and smothered in a smooth chocolate ganache.

WHY YOU WILL LOVE THIS RECIPE

  • Nostalgic Flavour: These cookies taste just like the classic cosmic brownies we loved as kids, but even better.

  • Fudgy Texture: Soft, dense, and chocolate-packed—each bite is like a gooey brownie in cookie form.

  • Eye-Catching Toppings: Rainbow chips make these cookies colourful, fun, and perfect for parties or gifting.

  • Simple Ingredients: Pantry staples come together to create a bakery-style treat at home.

  • Kid-Friendly Fun: Great for baking with little ones—especially when it’s time to decorate.

  • Perfect for Gifting: These cookies pack well and stay moist, making them ideal for sharing or shipping.

  • Crowd-Pleaser: Whether for potlucks or parties, everyone reaches for the cosmic brownie cookies first.

INGREDIENTS

  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips

For the topping:

  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • ¼ cup rainbow candy-coated chips or sprinkles

DIRECTIONS

  • Step No.1: Prep the oven and pan
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.

  • Step No.2: Mix wet ingredients
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar. Add the egg and vanilla extract and mix until smooth.

  • Step No.3: Add dry ingredients
Sift in the flour, cocoa powder, baking soda, and salt. Stir until combined, then fold in the chocolate chips.

  • Step No.4: Scoop and bake
Scoop tablespoon-sized dough balls onto the baking sheet. Flatten slightly with your palm. Bake for 8–10 minutes or until just set.

  • Step No.5: Make the ganache
While cookies cool, heat the heavy cream until hot (not boiling). Pour over 1 cup chocolate chips and let sit for 2 minutes. Stir until smooth.

  • Step No.6: Top with ganache
Spoon a small amount of ganache over each cookie. Spread gently to the edges with the back of a spoon.

  • Step No.7: Add rainbow chips
Sprinkle rainbow chips over the ganache before it sets. Let cookies sit until ganache firms up completely.

TIPS FOR SUCCESS

  • Use Room Temp Egg: A room temperature egg mixes better and creates a smoother dough texture.

  • Don’t Overbake: Slightly underbake for the best fudgy texture—they'll continue cooking as they cool.

  • Cool Before Topping: Make sure cookies are fully cooled before adding ganache so it doesn’t melt off.

  • Set Ganache Properly: Let the ganache firm at room temp for a clean, glossy finish.

  • Avoid Boiling Cream: Heat the cream until steaming—not boiling—to avoid separating the chocolate.

  • Chill Dough Briefly: If dough is too sticky, chill for 15 minutes before baking.

  • Store with Wax Paper: Use wax paper between layers if stacking cookies to prevent sticking.

VARIATIONS

  • Peanut Butter Cosmic: Add a swirl of peanut butter to the ganache for a rich twist.

  • Mint Chocolate Version: Stir in peppermint extract for a cool holiday vibe.

  • double chocolate Chips: Add white and dark chocolate chips to the dough for variety.

  • Mini Version: Use a mini cookie scoop for bite-sized party treats.

  • gluten-free diet Option: Substitute with a 1:1 gluten-free flour blend.

  • Add Espresso Powder: A touch of espresso deepens the chocolate flavour beautifully.

  • Holiday Edition: Swap rainbow chips for red and green sprinkles for festive flair.

SERVING AND STORAGE

Serving

Serve at room temperature with a glass of milk or hot cocoa for the ultimate nostalgic dessert moment.

Storage

Store in an airtight container at room temperature for up to 5 days or freeze for 2 months.

FAQ

Can I use milk chocolate instead of semi-sweet?

Yes! Milk chocolate makes it sweeter and more kid-friendly, while semi-sweet offers a richer taste.

Do I need to chill the dough?

Not necessary, but a short chill helps if your dough feels sticky or warm.

Where can I find rainbow chips?

They’re often called “confetti chips” or “rainbow sprinkles”—look in the baking aisle or online.

Can I skip the ganache topping?

Yes, but the ganache is what makes it a “cosmic” cookie—without it, it’s just a brownie cookie.

Can I make them ahead of time?

Absolutely! Bake and store the cookies; add ganache and chips right before serving if you want them fresh.

Cosmic Brownie Cookies are more than just a dessert—they’re a ticket back to childhood with every soft, chocolatey bite.

The fudgy cookie base, silky ganache topping, and colourful candy chips make them as fun to look at as they are to eat.

They’re perfect for parties, cookie swaps, or just when you need a treat that sparks joy.

Best of all, they’re easy to make and even easier to love.

Keep a stash of rainbow chips in your pantry, and you can whip these up anytime the craving hits.

Bake a batch today and bring a little cosmic magic to your kitchen!

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

— Sana
