Ingredients
  

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup granulated sugar for rolling

Instructions
 

Preheat the Oven:

  • Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Mix the Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.

Make the Dough:

  • In a large bowl, beat together the softened butter and 1 ½ cups granulated sugar until light and fluffy. Add the egg and vanilla extract, beating until smooth. Gradually add the dry ingredients and mix until combined.

Shape the Cookies:

  • Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in the ¼ cup of sugar to coat evenly.

Bake the Cookies:

  • Place the dough balls about 2 inches apart on the prepared baking sheets. Bake for 10–12 minutes, or until the edges are golden and the centers are set.

Cool and Serve:

  • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Notes

Make Ahead:
The dough can be prepared ahead of time and stored in the fridge for up to 2 days. You can also freeze the dough balls and bake them directly from the freezer.
Customizing the Flavor:
Add a pinch of cinnamon or almond extract to the dough for a flavor twist. You can also sprinkle colored sugar on top for a festive touch.
