Ingredients
  

For the cookie dough:

  • 1 ½ cups all-purpose flour
  • 2 tablespoon unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract

For the topping:

  • 24 chocolate peppermint kisses or regular chocolate kisses
  • Powdered sugar for dusting optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg, red food coloring, vanilla extract, and peppermint extract, and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.
  • Once chilled, roll the dough into 1-inch balls and place them onto the prepared baking sheet.
  • Bake the cookies for 10-12 minutes, or until they are set but slightly soft in the center.
  • Remove the cookies from the oven and immediately press a chocolate peppermint kiss into the center of each cookie.
  • Allow the cookies to cool completely on a wire rack. Once cool, dust with powdered sugar if desired.

Notes

  • You can use regular chocolate kisses if you prefer a less minty flavor, or opt for milk or dark chocolate kisses for variation.
