One Pot Lemon Chicken Orzo is a bright, flavorful meal featuring tender chicken, lemon-infused orzo pasta, and fresh herbs all cooked together for an easy, wholesome dinner with minimal cleanup.

Ingredients
  

  • 1 lb boneless skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup orzo pasta
  • 2 ½ cups chicken broth
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped

Instructions
 

Sauté Chicken:

  • Heat olive oil in a large skillet or pot over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5–7 minutes. Remove and set aside.

Cook Aromatics:

  • In the same pot, add onion and garlic. Sauté for 2–3 minutes until fragrant and softened.

Add Orzo and Broth:

  • Stir in orzo, chicken broth, lemon juice, lemon zest, and oregano. Bring to a boil.

Simmer:

  • Reduce heat to low, cover, and simmer for 10–12 minutes until orzo is tender and liquid is absorbed.

Combine & Serve:

  • Return chicken to the pot and stir to combine. Sprinkle with fresh parsley before serving.

Notes

  • Make Ahead: Cook chicken separately and reheat before adding to orzo for quicker assembly.
  • Variations: Add spinach, cherry tomatoes, or feta cheese for extra flavour.
