These no-bake peanut butter balls are creamy, sweet, and covered in a rich chocolate shell. Perfect for gifting, parties, or a quick treat, they require no oven time and come together with just a few ingredients.

Ingredients
  

  • 1 cup creamy peanut butter
  • ¼ cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups semisweet or milk chocolate chips
  • 1 tablespoon coconut oil or shortening optional, for smoother chocolate

Instructions
 

Step 1 – Make the Peanut Butter Mixture:

  • In a large bowl, mix peanut butter, butter, powdered sugar, and vanilla until smooth and thick. Roll into 1-inch balls and place on a lined baking sheet.

Step 2 – Chill:

  • Refrigerate the balls for at least 30 minutes, or until firm.

Step 3 – Melt the Chocolate:

  • In a microwave-safe bowl, melt chocolate chips (and coconut oil if using) in 30-second intervals, stirring until smooth.

Step 4 – Dip and Set:

  • Using a fork or toothpick, dip each ball into the melted chocolate. Let excess drip off and return to the lined tray. Chill until the chocolate is set.

Notes

  • Storage: Store in an airtight container in the fridge for up to 1 week, or freeze for up to 1 month.
  • Variations: Use crunchy peanut butter for texture, or add crushed graham crackers for a twist.
