Instructions
Step 1 – Make the Peanut Butter Mixture:
In a large bowl, mix peanut butter, butter, powdered sugar, and vanilla until smooth and thick. Roll into 1-inch balls and place on a lined baking sheet.
Step 2 – Chill:
Refrigerate the balls for at least 30 minutes, or until firm.
Step 3 – Melt the Chocolate:
In a microwave-safe bowl, melt chocolate chips (and coconut oil if using) in 30-second intervals, stirring until smooth.
Step 4 – Dip and Set:
Using a fork or toothpick, dip each ball into the melted chocolate. Let excess drip off and return to the lined tray. Chill until the chocolate is set.
