Ingredients
  

  • 1 cup unsalted butter
  • ½ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1 cup semi-sweet chocolate chips
  • ½ cup peanut butter

Instructions
 

Make the Oat Base:

  • In a saucepan over medium heat, melt butter. Stir in brown sugar and vanilla. Mix in oats and cook for 2–3 minutes.

Press Half into Pan:

  • Line an 8x8-inch pan with parchment paper. Press half the oat mixture into the bottom and flatten evenly.

Make the Chocolate Layer:

  • In a microwave-safe bowl, melt chocolate chips and peanut butter together in 30-second bursts, stirring until smooth.

Layer and Finish:

  • Spread the chocolate mixture over the oat layer. Top with remaining oat mixture, pressing gently. Chill for at least 2 hours.

Slice & Serve:

  • Once firm, cut into bars and enjoy!

Notes

Storage: Store in the fridge for up to 1 week or freeze for up to 2 months.
Nut-Free Option: Use sunflower seed butter in place of peanut butter.
