Ingredients
  

For the Base:

  • 300 g digestive biscuits or graham crackers, crushed
  • 120 g unsalted butter melted

For the Caramel Cheesecake Layer:

  • 400 g cream cheese softened
  • 200 ml double cream heavy cream
  • 200 g dulce de leche or thick caramel sauce
  • 1 teaspoon vanilla extract

For the Chocolate Ganache Topping:

  • 150 g dark or milk chocolate chopped
  • 150 ml double cream

Optional Toppings:

  • Caramel drizzle
  • Chocolate curls or shavings
  • Sea salt flakes

Instructions
 

  • Make the Base:
  • Mix crushed biscuits with melted butter. Press into the base of a springform tin (8 or 9-inch). Chill in the fridge while preparing the filling.
  • Prepare the Cheesecake Layer:
  • Beat cream cheese until smooth. In a separate bowl, whip the double cream until soft peaks form. Fold the whipped cream and vanilla into the cream cheese, then gently fold in the caramel.
  • Assemble the Cheesecake:
  • Spoon the caramel cheesecake mixture over the biscuit base. Smooth the top with a spatula. Refrigerate for at least 4 hours or overnight until set.
  • Make the Ganache:
  • Heat double cream in a saucepan until just simmering. Pour over chopped chocolate. Let sit for 1–2 minutes, then stir until smooth.
  • Finish the Topping:
  • Once the cheesecake is set, pour the ganache over the top. Gently spread it out evenly. Chill for another 30 minutes to firm up.
  • Serve:
  • Decorate with caramel drizzle, chocolate shavings, or sea salt. Slice and serve chilled.
