Millionaire’s Cheesecake is a rich, no-bake dessert layered with a buttery biscuit base, creamy caramel cheesecake filling, and a smooth chocolate ganache topping. Decadent, elegant, and perfect for holidays or special occasions.
Mix crushed biscuits with melted butter. Press into the base of a springform tin (8 or 9-inch). Chill in the fridge while preparing the filling.
Prepare the Cheesecake Layer:
Beat cream cheese until smooth. In a separate bowl, whip the double cream until soft peaks form. Fold the whipped cream and vanilla into the cream cheese, then gently fold in the caramel.
Assemble the Cheesecake:
Spoon the caramel cheesecake mixture over the biscuit base. Smooth the top with a spatula. Refrigerate for at least 4 hours or overnight until set.
Make the Ganache:
Heat double cream in a saucepan until just simmering. Pour over chopped chocolate. Let sit for 1–2 minutes, then stir until smooth.
Finish the Topping:
Once the cheesecake is set, pour the ganache over the top. Gently spread it out evenly. Chill for another 30 minutes to firm up.
Serve:
