Ingredients
  

For the Lemon Brownies:

  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • ¼ teaspoon salt
  • ½ cup unsalted butter melted
  • 2 large eggs
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon vanilla extract

For the Lemon Glaze:

  • ½ cup powdered sugar
  • 1 –2 tablespoons fresh lemon juice
  • Zest of ½ lemon optional

Instructions
 

Preheat Oven:

  • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.

Make the Brownie Batter:

  • In a mixing bowl, whisk together flour, sugar, and salt. In another bowl, combine melted butter, eggs, lemon zest, lemon juice, and vanilla. Add wet ingredients to dry and mix until just combined.

Bake:

  • Pour the batter into the prepared pan and spread evenly. Bake for 25–28 minutes, or until a toothpick inserted in the centre comes out clean. Allow to cool completely.

Prepare the Glaze:

  • In a small bowl, whisk together powdered sugar and lemon juice until smooth. Add lemon zest for extra flavour if desired.

Glaze the Brownies:

  • Once cooled, drizzle or spread the lemon glaze over the brownies. Let the glaze set before slicing.

Lemon brownies can be made a day in advance. Store in an airtight container once the glaze is set.
