Ingredients

  • 2 ½ cups powdered sugar
  • 1 ½ tablespoon unsweetened coconut milk or milk of choice
  • 2 teaspoon peppermint extract
  • ¼ cup softened unsalted butter
  • 8 oz dark chocolate or semi-sweet chocolate, chopped
  • 1 tablespoon coconut oil optional, for smooth coating

Instructions

  • In a medium bowl, combine the powdered sugar, coconut milk (or milk of choice), and peppermint extract. Stir until smooth and thick.
  • Add the softened butter and mix until well combined.
  • Roll the mixture into small balls (about 1 teaspoon of filling per ball), then flatten them slightly into discs using your fingers.
  • Place the discs on a parchment-lined baking sheet and refrigerate for at least 30 minutes until firm.
  • Meanwhile, melt the dark chocolate in a heatproof bowl over a double boiler or in the microwave, stirring every 20-30 seconds until smooth.
  • Stir in the coconut oil if you want a smoother and shinier chocolate coating.
  • Once the peppermint discs are firm, dip each one into the melted chocolate, coating completely. Return to the parchment paper and let any excess chocolate drip off.
  • Place the chocolate-coated patties back on the baking sheet and refrigerate for 30 minutes to set the chocolate.
  • Serve chilled or at room temperature and enjoy!

Notes

  • For a dairy-free version, use dairy-free butter and coconut milk or almond milk.
  • You can use milk chocolate if you prefer a sweeter flavor or dark chocolate for a richer, more intense taste.
  • Store the peppermint patties in an airtight container in the refrigerator for up to 2 weeks.
  • To make the patties more festive, dip them in white chocolate instead of dark chocolate and sprinkle with crushed candy canes.
  • If you want to add a bit more texture, you can sprinkle some crushed nuts (like almonds or pistachios) on top of the chocolate coating before it hardens.
  • These make great gifts! Just pack them in a cute box or jar with a ribbon for a homemade treat anyone would love.
