Ingredients
  

For the Red Velvet Crust:

  • 1 ½ cups crushed red velvet cake crumbs or red velvet cookies
  • ¼ cup melted butter
  • 1 tablespoon cocoa powder

For the Cheesecake Filling:

  • 16 oz 2 packages cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup sour cream
  • 1 tablespoon cornstarch

For the Strawberry Topping:

  • 1 cup fresh strawberries sliced
  • ¼ cup strawberry jam or glaze
  • Whipped cream for garnish (optional)

Instructions
 

  • Preheat the Oven: Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  • Make the Crust: In a bowl, mix red velvet crumbs, melted butter, and cocoa powder until combined. Press the mixture firmly into the bottom of the pan. Bake for 10 minutes, then set aside.
  • Prepare the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time, beating just until combined. Mix in sour cream and cornstarch.
  • Assemble and Bake: Pour the cheesecake batter over the crust. Bake for 45–50 minutes, or until the center is just set. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
  • Chill and Top: Once cooled, refrigerate for at least 4 hours or overnight. Before serving, top with strawberry slices and warm strawberry jam or glaze. Garnish with whipped cream if desired.
