Garlic Herb Salmon with Asparagus and Potatoes is a flavour-packed, nutritious one-pan dinner. Tender salmon, crisp asparagus, and golden potatoes are baked with zesty herbs and garlic butter for a complete, fuss-free meal.

Ingredients
  

  • 4 salmon fillets
  • 1 lb baby potatoes halved
  • 1 bunch asparagus trimmed
  • 3 tablespoons olive oil
  • 3 tablespoons melted butter
  • 4 garlic cloves minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Lemon slices and fresh parsley for garnish

Instructions
 

Preheat Oven:

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment or foil.

Roast the Potatoes:

  • Toss halved potatoes with 1 tablespoon olive oil, salt, pepper, and half the garlic. Roast for 15 minutes.

Add Salmon and Asparagus:

  • Push potatoes to the side. Place salmon and asparagus on the tray. Drizzle everything with melted butter, remaining olive oil, garlic, lemon juice, Italian seasoning, and thyme.

Bake:

  • Return tray to oven and bake 12–15 minutes more, or until salmon flakes and potatoes are tender.

Serve:

  • Garnish with lemon slices and fresh parsley. Serve warm.

Notes

Make it dairy-free:
Swap butter with extra olive oil.
Storage:
Refrigerate leftovers in an airtight container for up to 2 days.
