Ingredients
  

  • 1 lb 450g dried black eyed peas, rinsed and sorted
  • 6 cups chicken broth or water
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup diced smoked ham or ham hock
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • Optional: hot sauce for serving

Instructions
 

Prepare Ingredients:

  • Rinse and sort black eyed peas. No soaking needed.

Combine in Crockpot:

  • Add peas, broth, onion, garlic, ham, paprika, pepper, salt, thyme, and bay leaf to crockpot.

Cook:

  • Cover and cook on low for 6–8 hours or until peas are tender.

Adjust Seasoning:

  • Remove bay leaf. Taste and adjust salt or add a splash of hot sauce.

Serve:

  • Serve hot as a main dish or hearty side.
