CREAMY SUN-DRIED TOMATO CHICKEN PASTA

Ingredients
  

  • 12 oz 340g pasta of choice (penne or fettuccine works well)
  • 1 lb 450g boneless, skinless chicken breasts, cut into strips
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil chopped (for garnish)

Instructions
 

  • Cook Pasta: Cook pasta according to package instructions until al dente. Drain and set aside.
  • Cook Chicken: In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook until golden and cooked through. Remove and set aside.
  • Make Sauce: In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes. Add cream, chicken broth, Parmesan, and Italian seasoning. Simmer until sauce thickens slightly.
  • Combine: Return chicken to the skillet, then add pasta. Toss to coat evenly in the creamy sauce.
  • Serve: Garnish with fresh basil and extra Parmesan. Serve hot.
