Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons instant coffee or espresso powder
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips or chunks optional

Instructions
 

Preheat Oven:

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Cream Butter and Sugar:

  • In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.

Add Eggs and Flavouring:

  • Beat in eggs, vanilla extract, and instant coffee until smooth.

Mix Dry Ingredients:

  • In another bowl, whisk flour, baking soda, and salt. Gradually mix into the wet ingredients.

Add Chocolate (Optional):

  • Fold in chocolate chips if using.

Scoop and Bake:

  • Drop spoonfuls of dough onto the prepared sheet. Bake for 10–12 minutes or until edges are set.

Cool and Serve:

  • Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
