Instructions
Make Filling Base:
Melt butter in a skillet, whisk in flour, and cook for 1–2 minutes. Slowly add milk and broth, whisking until thick and creamy.
Add Vegetables:
Stir in carrots, peas, celery, onion, salt, and pepper. Cook until slightly tender.
Add Protein (Choose Variation):
Stir in chicken, turkey, beef, or mushrooms/potatoes for vegetarian version.
Assemble Pot Pie:
Place bottom crust in pie dish, add filling, then cover with top crust. Seal edges and cut small slits on top.
Bake:
Bake at 375°F (190°C) for 35–40 minutes until crust is golden brown and filling is bubbling.
Serve:
Let cool for 10 minutes before slicing and serving warm.
