These Christmas tree meringues are crisp, light, and perfectly sweet. Shaped like festive trees and decorated with sprinkles, they’re a fun and whimsical holiday treat that's easy to make and great for gifting.
Preheat oven to 200°F (93°C). Line two baking sheets with parchment paper.
Make the Meringue:
In a clean, dry mixing bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Slowly add sugar, 1 tablespoon at a time, beating on high until stiff, glossy peaks form and sugar is dissolved. Beat in vanilla and a small amount of green gel food colouring.
Pipe the Trees:
Transfer meringue into a piping bag fitted with a large star tip. Pipe meringue into small tree shapes, swirling upward. Top each with a star sprinkle or decorate with nonpareils.
Bake:
Bake for 1 hour 15 minutes. Turn off oven and leave meringues inside to cool for 1 hour with the door closed.
