Ingredients

  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ¾ cup powdered sugar plus extra for rolling
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ½ cup mini chocolate chips optional
  • 1 tablespoon milk optional, for added softness

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  • In a large bowl, beat the softened butter and powdered sugar until light and fluffy, about 2-3 minutes.
  • Add the egg and vanilla extract, and continue mixing until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If the dough is too thick, add 1 tablespoon of milk to soften it.
  • Fold in the mini chocolate chips (if using) for an extra chocolatey bite.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes, or until the edges are set but the center is still soft.
  • Allow the cookies to cool on the baking sheet for 5 minutes, then roll them in powdered sugar while they are still warm.
  • Once cooled, roll them again in powdered sugar for an extra snowy finish.

Notes

  • These cookies can be stored in an airtight container for up to 5 days.
  • If you want a more intense chocolate flavor, you can use dark cocoa powder or add a few more mini chocolate chips.
  • For an even richer flavor, you can replace the mini chocolate chips with finely chopped dark chocolate.
  • You can freeze the dough and bake later for up to 3 months. Roll the dough into balls, freeze them on a baking sheet, and then store them in a freezer bag. Bake directly from frozen, adding an extra minute or two to the baking time.
  • To make them extra festive, add a pinch of cinnamon to the dough for a warm spice flavor.
