Chicken Teriyaki Noodles are a quick and flavorful dish featuring tender chicken, stir-fried noodles, and a savory-sweet teriyaki sauce. It's an easy one-pan meal perfect for busy weeknights!

Ingredients
  

  • 8 oz lo mein or rice noodles
  • 2 boneless skinless chicken breasts, sliced thin
  • 2 tablespoons vegetable oil
  • 2 cups stir-fry vegetables bell peppers, carrots, broccoli, snap peas
  • 2 green onions sliced (for garnish)
  • 1 tablespoon sesame seeds optional

Teriyaki Sauce:

  • ΒΌ cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons cornstarch mixed with 2 teaspoons water
  • 1 teaspoon grated ginger
  • 2 cloves garlic minced

Instructions
 

Step No.1: Cook the Noodles

  • Cook the noodles according to package instructions, then drain and set aside.

Step No.2: Make the Teriyaki Sauce

  • In a bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, ginger, garlic, and cornstarch slurry. Set aside.

Step No.3: Cook the Chicken

  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 4-5 minutes until browned and cooked through. Remove from the pan.

Step No.4: Stir-Fry the Vegetables

  • In the same pan, add the remaining 1 tablespoon of oil. Stir-fry the vegetables for 3-4 minutes until slightly tender but still crisp.

Step No.5: Combine Everything

  • Return the chicken to the pan, pour in the teriyaki sauce, and stir well. Add the cooked noodles and toss to coat everything in the sauce.

Step No.6: Serve & Garnish

  • Top with sliced green onions and sesame seeds. Serve hot and enjoy!

Notes

  • Best Noodles: Lo mein, udon, or rice noodles work well for this recipe.
  • Adjust Sweetness: Add more or less honey/sugar based on preference.
  • Gluten-Free Option: Use tamari instead of soy sauce and rice noodles.
  • Extra Flavor: Drizzle with sriracha or extra sesame oil before serving.
