Instructions
Sauté vegetables: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery and cook for 5-7 minutes, until softened. Add the minced garlic and cook for 1 minute more, until fragrant.
Add broth and chicken: Pour in the chicken broth and add the chicken pieces. Bring to a simmer.
