This cherry chocolate cheesecake combines rich chocolate and sweet cherries in a smooth, creamy dessert. With a chocolate cookie crust and cherry topping, it’s a decadent treat perfect for holidays, birthdays, or special occasions.
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan or line the bottom with parchment paper.
Make the Crust:
In a bowl, combine chocolate cookie crumbs, sugar, and melted butter. Press mixture firmly into the bottom of the pan. Bake for 10 minutes. Let cool.
Prepare the Filling:
Beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix well. Stir in melted chocolate until fully incorporated. Beat in eggs one at a time just until blended.
Bake:
Pour filling over the crust. Bake for 55–60 minutes or until the center is set. Turn off oven and leave cheesecake inside with the door slightly open for 1 hour.
Chill:
Refrigerate cheesecake for at least 4 hours or overnight.

Spoon cherry pie filling over chilled cheesecake. Garnish with chocolate shavings if desired.
