Preheat oven to 350°F (175°C). Grease and flour a loaf or bundt pan. In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Mix Wet Ingredients:
In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla. Stir in grated carrots and sour cream.
Combine and Bake:
Gradually fold in dry ingredients. Pour batter into prepared pan and bake 50–55 minutes or until a toothpick inserted comes out clean. Cool completely.
