These Brown Sugar Glazed Potatoes are a sweet and savory side dish that's perfect for any occasion. Tender potatoes are roasted and then tossed in a rich brown sugar glaze, creating a caramelized and flavorful coating.
2 pounds small potatoes (such as Yukon Gold or red potatoes), quartered or halved if larger
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper
¼ cup (½ stick) unsalted butter
½ cup packed brown sugar
¼ cup maple syrup (or honey)
1 tablespoon apple cider vinegar
½ teaspoon ground cinnamon
Pinch of nutmeg
Instructions
Preheat oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare potatoes: Wash and dry the potatoes. Cut them into quarters or halves if they are large.
Season potatoes: In a large bowl, toss the potatoes with olive oil, salt, and pepper.
Roast potatoes: Spread the potatoes in a single layer on the prepared baking sheet. Roast for 30-40 minutes, or until they are tender and slightly crispy on the outside.
Make the glaze: While the potatoes are roasting, melt the butter in a medium saucepan over medium heat. Add the brown sugar, maple syrup (or honey), apple cider vinegar, cinnamon, and nutmeg. Stir well and bring to a simmer. Cook for 2-3 minutes, stirring occasionally, until the glaze thickens slightly.
Glaze potatoes: Once the potatoes are roasted, transfer them to the saucepan with the brown sugar glaze. Toss to coat the potatoes evenly.
Serve: Serve the brown sugar glazed potatoes hot.
Notes
Potatoes: You can use any type of small potato for this recipe. Yukon Gold or red potatoes work well because they hold their shape during roasting.
Brown Sugar: Light or dark brown sugar can be used. Dark brown sugar will give the glaze a richer flavor.
Maple Syrup: Maple syrup adds a nice depth of flavor to the glaze, but you can substitute honey if you prefer.
Apple Cider Vinegar: Apple cider vinegar adds a touch of tanginess to balance the sweetness of the glaze.
Spice Level: Adjust the amount of cinnamon and nutmeg to your liking.
