Ingredients
  

  • 1 lb beef stew meat cut into cubes
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 3 potatoes peeled and diced
  • 1 14 oz can diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups green beans trimmed and cut into pieces
  • 1 cup corn kernels fresh or frozen
  • Fresh parsley for garnish optional

Instructions
 

Brown Beef:

  • Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove beef and set aside.

Sauté Vegetables:

  • In the same pot, add onion and garlic. Cook until softened, about 3 minutes.

Add Broth and Seasonings:

  • Return beef to pot. Add carrots, celery, potatoes, diced tomatoes, beef broth, thyme, rosemary, salt, and pepper. Bring to a boil.

Simmer:

  • Reduce heat, cover, and simmer for 1 hour.

Add Remaining Veggies:

  • Add green beans and corn. Cook for another 15–20 minutes until all vegetables are tender.

Serve:

  • Garnish with fresh parsley if desired. Serve hot.

Notes

  • Make Ahead: Soup tastes better the next day; store leftovers in the fridge.
