Ingredients

  • 2 cups pecan halves toasted
  • 24 soft caramel candies
  • 1 tablespoon heavy cream
  • 1 ½ cups semi-sweet chocolate chips
  • Sea salt optional, for garnish

Instructions

Prepare the Base:

  • Line a baking sheet with parchment paper. Arrange 3–4 pecan halves in clusters to form the “legs” of each turtle.

Melt the Caramel:

  • In a microwave-safe bowl, combine caramel candies and heavy cream. Microwave in 30-second intervals, stirring until smooth.

Add Caramel:

  • Spoon a small amount of the melted caramel onto the centre of each pecan cluster. Let it sit for a few minutes to slightly set.

Melt the Chocolate:

  • Melt the chocolate chips in the microwave or a double boiler until smooth. Stir well.

Top with Chocolate:

  • Spoon or drizzle melted chocolate over each caramel cluster, covering the caramel and some of the pecans.

Set and Serve:

  • Sprinkle with sea salt if using. Allow the candies to set at room temperature or chill in the fridge for 10–15 minutes until firm.

Notes

  • Make Ahead: These candies can be made up to a week in advance and stored in an airtight container at room temperature or in the fridge.
  • Customizations: Use dark or milk chocolate, and try adding a touch of sea salt or white chocolate drizzle for variation.
  • Serving Tip: Package in mini cupcake liners and gift boxes for easy, festive sharing.
