Ingredients
  

  • ¼ cup turkey drippings or butter if no drippings
  • ¼ cup all-purpose flour
  • 3 cups turkey or chicken broth
  • Salt and pepper to taste
  • Optional: fresh herbs thyme, sage, or rosemary

Instructions
 

  • Collect Drippings: After roasting turkey, pour pan drippings into a measuring cup. Skim off excess fat, reserving ¼ cup.
  • Make Roux: In a saucepan over medium heat, whisk together drippings (or butter) and flour. Cook 2–3 minutes until golden and fragrant.
  • Add Broth: Gradually whisk in broth, stirring constantly to avoid lumps.
  • Simmer: Bring to a gentle boil, then reduce heat and simmer 5–7 minutes until thickened.
  • Season: Add salt, pepper, and optional herbs to taste. Serve hot.
