TRADITIONAL BRITISH PIMM'S TRIFLE FOR SUMMER GARDEN PARTIES (SHOWSTOPPER DESSERT)

This traditional British Pimm's trifle is a vibrant, layered showstopper dessert inspired by classic summer garden parties. Light sponge, juicy berries, jelly, and creamy custard come together with a refreshing Pimm’s twist.

Ingredients
  

For the Sponge Layer:

  • 300 g sponge cake or pound cake, cubed
  • ½ cup Pimm’s (or fruit juice alternative)
  • ½ cup orange juice

For the Fruit Layer:

  • 2 cups strawberries, sliced
  • 1 cup raspberries
  • ½ cup cucumber, thinly sliced
  • 2 tablespoons fresh mint leaves

For the Jelly Layer:

  • 2 cups strawberry jelly (prepared)

For the Custard Layer:

  • 2 cups custard (prepared or instant)
  • 1 teaspoon vanilla extract

For the Topping:

  • 2 cups whipped cream
  • 1 cup fresh berries
  • as needed mint sprigs

Instructions
 

Prepare Sponge Base

  • Arrange cubed sponge cake in the bottom of a trifle bowl. Drizzle with Pimm’s and orange juice to soak lightly.

Add Fruit Layer

  • Layer strawberries, raspberries, cucumber slices, and mint evenly over the sponge.

Add Jelly

  • Pour prepared strawberry jelly over the fruit layer and refrigerate until slightly set.

Add Custard

  • Spread custard evenly over the jelly layer once it has set.

Top with Cream

  • Add whipped cream on top and smooth with a spatula.

Decorate & Chill

  • Garnish with fresh berries and mint sprigs. Chill for at least 2–3 hours before serving.
