Ingredients
  

For the Fruit Layer:

  • 2 cups strawberries, sliced
  • 1 large orange, segmented
  • ½ small cucumber, thinly sliced
  • ¼ cup fresh mint leaves

For the Jelly Layer:

  • 1 packet strawberry jelly mix
  • 2 cups boiling water
  • ½ cup Pimm’s (optional)

For the Sponge Layer:

  • 4 cups sponge cake or pound cake, cubed
  • ½ cup orange juice

For the Custard Layer:

  • 2 cups vanilla custard

For the Cream Layer:

  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Prepare Jelly

  • Dissolve jelly mix in boiling water and stir in Pimm’s if using. Pour into bowl and chill until just set.

Add Sponge Layer

  • Place cubed sponge cake over the set jelly and drizzle with orange juice.

Add Fruit Layer

  • Spread strawberries, orange segments, cucumber slices, and mint over the sponge layer.

Add Custard

  • Pour vanilla custard evenly over the fruit layer.

Whip Cream

  • Whip cream with powdered sugar and vanilla until soft peaks form.

Top & Chill

  • Spread whipped cream on top and chill for at least 4 hours before serving.

Serve

  • Garnish with fresh fruit and mint before serving for a classic garden party look.
