Ingredients
  

  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved (or 1 large tomato, chopped)
  • ¼ teaspoon red pepper flakes optional
  • 2 tablespoons fresh lemon juice
  • ¼ cup unsalted butter cut into pieces
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh basil or parsley optional

Instructions
 

Sauté Garlic:

  • Heat olive oil in a skillet over medium heat. Add garlic and cook for 1 minute until fragrant.

Add Tomatoes:

  • Add cherry tomatoes and red pepper flakes. Cook 5–7 minutes, stirring occasionally, until tomatoes soften and burst.

Add Lemon & Butter:

  • Stir in lemon juice and reduce heat to low. Add butter a few pieces at a time, stirring constantly until sauce is smooth.

Season & Finish:

  • Add salt, pepper, and herbs if using. Simmer for another 2–3 minutes, then remove from heat.

Serve:

  • Pour over cooked pasta, fish, shrimp, or grilled chicken.

Notes

  • Make Ahead: Can be stored in the fridge for up to 3 days and reheated gently.
  • Variations: Add capers or a splash of white wine for more depth.
