Ingredients
  

For the Sausage Gravy:

  • 1 pound breakfast sausage
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • Salt and pepper to taste

For the Tater Tot Bowls:

  • 1 bag (32 oz) frozen tater tots
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh parsley (for garnish)
  • Hot sauce (optional, for serving)

Instructions
 

Prepare the Tater Tots:

  • Preheat the oven according to the tater tot package instructions. Spread the tater tots on a baking sheet and bake until crispy and golden brown, about 20-25 minutes.

Prepare the Sausage Gravy:

  • While the tater tots are baking, cook the breakfast sausage in a large skillet over medium heat until browned and cooked through. Remove the sausage with a slotted spoon and set aside, leaving the grease in the skillet.
  • Add the flour to the skillet and whisk for 1-2 minutes to create a roux.
  • Gradually whisk in the milk, stirring constantly, until the mixture thickens into a gravy. Season with salt and pepper to taste.
  • Return the cooked sausage to the skillet and mix well. Keep the gravy warm over low heat.

Prepare the Eggs:

  • Cook the eggs to your preference (scrambled, fried, or poached).

Assemble the Breakfast Bowls:

  • Divide the crispy tater tots among four bowls.
  • Top each bowl with a generous scoop of sausage gravy
  • Add the cooked eggs on top of the gravy.
  • Sprinkle with shredded cheddar cheese and chopped green onions.
  • Garnish with fresh parsley and add a dash of hot sauce, if desired.
