This Taco Pasta Salad is zesty, hearty, and loaded with Tex-Mex flavors. A fun twist on taco night, it’s perfect for picnics, potlucks, or an easy weeknight dinner.

Ingredients
  

For the Salad:

  • 8 oz rotini pasta or any short pasta
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • ½ cup water
  • 1 cup cherry tomatoes halved
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn frozen or canned, drained
  • 1 red bell pepper diced
  • 1 cup shredded cheddar cheese
  • 1 cup chopped romaine or iceberg lettuce
  • ¼ cup sliced black olives optional
  • 2 green onions chopped
  • ½ cup crushed tortilla chips optional, for topping

For the Dressing:

  • ½ cup sour cream or Greek yogurt
  • ¼ cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste

Instructions
 

Cook the Pasta:

  • Cook pasta according to package instructions. Drain and rinse with cold water to stop cooking.

Cook the Meat:

  • In a skillet over medium heat, brown the ground beef or turkey. Drain excess fat, then stir in taco seasoning and ½ cup water. Simmer until thickened, about 5 minutes. Let cool slightly.

Make the Dressing:

  • In a bowl, whisk together sour cream, mayo, lime juice, taco seasoning, and a pinch of salt and pepper.

Assemble the Salad:

  • In a large bowl, combine pasta, taco meat, beans, corn, tomatoes, bell pepper, cheese, lettuce, olives, and green onions. Pour over the dressing and toss to coat.

Chill and Serve:

  • Refrigerate for 30 minutes before serving. Top with crushed tortilla chips just before serving for crunch.

Notes

  • Make Ahead: Taco Pasta Salad can be prepared a few hours in advance and stored in the fridge. Add lettuce and chips just before serving to avoid sogginess.
