  • 1 cup corn kernels fresh, frozen, or canned, drained
  • 1 cup salsa
  • 6 small flour or corn tortillas cut in halves
  • 2 cups shredded Mexican blend cheese
  • ½ cup sour cream for serving, optional
  • ¼ cup chopped fresh cilantro for garnish, optional

Instructions

Step No.1: Preheat Oven

  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.

Step No.2: Cook the Beef

  • Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until the cheese is melted and bubbly.

Step No.6: Serve

  • Let the casserole cool for 5 minutes before slicing. Garnish with sour cream and fresh cilantro, and enjoy!

Notes

  • Tortilla Choice: Use corn tortillas for a firmer texture or flour tortillas for a softer bake.
  • Make-Ahead Friendly: Assemble ahead and refrigerate. Bake when ready to serve.
  • Spice Level: Add jalapeños or extra chili powder for heat.
  • Chicken Taco Casserole: Swap beef for shredded rotisserie chicken.
  • Vegetarian Taco Casserole: Use black beans, pinto beans, and bell peppers instead of meat.
  • Low-Carb Version: Replace tortillas with sliced zucchini or cauliflower rice.
  • Extra Crunch: Top with crushed tortilla chips before baking.
