Ingredients
  

For the Fries:

  • 4 medium russet potatoes peeled and cut into thin fries
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Nacho Cheese Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper optional
  • 2 tablespoons nacho-style jalapeño brine optional for tang

Instructions
 

Prep the Fries:

  • Soak potato fries in cold water for 30 minutes, then pat dry thoroughly.

Bake or Fry:

  • Toss fries in oil and seasoning mix. Bake at 425°F (220°C) for 25 minutes, flipping halfway, or deep-fry until golden and crisp.

Make the Cheese Sauce:

  • Melt butter in a saucepan over medium heat. Whisk in flour to form a roux. Slowly add milk while whisking until smooth and thickened. Stir in cheese, salt, cayenne, and jalapeño brine if using. Keep warm.

Serve:

  • Plate the hot fries and drizzle or serve with warm nacho cheese on the side.

Notes

Shortcut: Use frozen fries and just season and bake.
Spicier: Add more cayenne or a dash of hot sauce to the cheese.
Serving Tip: Top with jalapeños, sour cream, or taco meat for loaded fries.
