Sweet Potato Rounds with Goat Cheese & Cranberries are an easy, elegant appetizer perfect for holidays or gatherings. Roasted sweet potato slices are topped with creamy goat cheese, tangy cranberries, and a drizzle of honey for a delicious balance of flavors.
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step No.2: Season & Roast Sweet Potatoes
Place sweet potato rounds on the baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper. Toss to coat, then spread in a single layer. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
Step No.3: Assemble the Toppings
Once the sweet potatoes are done, let them cool slightly. Spread a small amount of goat cheese on each round.
Step No.4: Add Cranberries & Pecans
Sprinkle dried cranberries and chopped pecans over the goat cheese.
