Ingredients
  

  • 2 lbs boneless skinless chicken thighs or breasts, cubed
  • 1 20 oz can pineapple chunks (with juice)
  • ¾ cup brown sugar
  • ½ cup low-sodium soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon cornstarch + 2 tablespoons water optional for thickening
  • Cooked white rice for serving
  • Green onions or sesame seeds optional, for garnish

Instructions
 

Assemble Ingredients:

  • Place chicken pieces into the crockpot. Add pineapple chunks with juice, brown sugar, soy sauce, and minced garlic.

Slow Cook:

  • Cover and cook on low for 4–6 hours or high for 2½–3 hours, until chicken is tender.

Optional Thickening:

  • For a thicker sauce, mix cornstarch and water in a small bowl. Stir into crockpot during the last 30 minutes.

Serve:

  • Serve over cooked rice. Garnish with green onions or sesame seeds if desired.

Notes

  • Use fresh pineapple if preferred, but include juice or add ¼ cup extra water.
  • For a spicy kick, add a dash of red pepper flakes or sriracha.
