Strawberry Pretzel Salad is a classic Southern dessert with three irresistible layers: a salty pretzel crust, creamy cream cheese filling, and sweet strawberry gelatin topping. Perfect for potlucks, holidays, and summer gatherings.
Place pretzels in a ziplock bag and crush with a rolling pin into fine crumbs. In a medium bowl, combine crushed pretzels, melted butter, and 3 tablespoons sugar. Mix well.
Press Crust:
Press the pretzel mixture firmly into the bottom of a 9x13-inch baking dish.
Bake Crust:
Bake for 10 minutes. Remove from oven and let cool completely.
Beat Cream Cheese:
In a large bowl, beat cream cheese and 1 cup sugar together until smooth.
Add Whipped Topping:
Fold in thawed whipped topping until well combined.
Spread Cream Layer:
Spread the cream cheese mixture evenly over the cooled pretzel crust. Refrigerate while preparing the strawberry layer.
Dissolve Gelatin:
In a large bowl, dissolve strawberry gelatin in 2 cups boiling water. Stir for 2 minutes until completely dissolved.
Cool Gelatin:
Stir in 2 cups cold water. Refrigerate for about 45-60 minutes, until slightly thickened (consistency of egg whites).
Add Strawberries:
Fold sliced strawberries into the slightly thickened gelatin.
Pour Topping:
Pour strawberry mixture gently over the cream cheese layer. Spread evenly.
Chill:
Refrigerate for at least 4 hours, or until completely set (overnight is best).
Serve:
Slice and serve cold. Store leftovers in the refrigerator.
Notes
Make Ahead: This dessert MUST be made at least 4 hours ahead (overnight is best). It's perfect for making the day before a party or potluck.
Variations: Use raspberry gelatin and fresh raspberries instead of strawberry. Add ½ cup chopped pecans to the pretzel crust. Use low-fat cream cheese and sugar-free gelatin for a lighter version.
Serving Suggestions: Serve as a dessert or side salad at Thanksgiving, Easter, potlucks, BBQs, and summer picnics. Pairs well with ham, turkey, or fried chicken.
Allergy-Friendly: Use gluten-free pretzels for a gluten-free version. Use dairy-free cream cheese and coconut whipped topping for dairy-free.
Storage Tips: Store covered in the refrigerator for up to 5 days. The crust will soften over time but will still taste delicious. Do not freeze (gelatin will break down).
