Ingredients
  

For the Cookies:

  • 1 ½ cups all-purpose flour
  • 1 tablespoon matcha green tea powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Strawberry Frosting:

  • 1 cup powdered sugar
  • 2 tablespoons strawberry puree or strawberry jam
  • 1 –2 teaspoons milk as needed

Instructions
 

  • Preheat Oven: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a bowl, whisk together flour, matcha powder, baking powder, and salt.
  • Make Dough: In another bowl, beat butter and sugar until fluffy. Add egg and vanilla, mixing well. Slowly add dry ingredients until dough forms.
  • Shape Cookies: Scoop tablespoon-sized portions, roll into balls, and place on prepared sheet about 2 inches apart.
  • Bake: Bake 10–12 minutes, until edges are set. Cool completely.
  • Prepare Frosting: Mix powdered sugar, strawberry puree, and milk until smooth.
  • Frost Cookies: Spread or drizzle frosting over cooled cookies. Let set before serving.

Notes

  • Customisations: Use freeze-dried strawberries in the frosting for extra flavour.
  • Make Ahead: Cookies can be baked 2 days ahead and frosted before serving.
