STRAWBERRY CHEESECAKE CINNAMON ROLLS

These Strawberry Cheesecake Cinnamon Rolls combine the best of both worlds with a sweet, tangy cream cheese filling and a luscious strawberry topping, all wrapped in a soft cinnamon roll. Perfect for breakfast, brunch, or dessert.

Ingredients
  

For the Dough:

  • 1 cup warm milk (110°F/45°C)
  • 2 ¼ teaspoons active dry yeast
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 4 ½ cups all-purpose flour
  • 1 teaspoon salt

For the Filling:

  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 cup strawberry preserves
  • 1 tablespoon ground cinnamon

For the Topping:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • ½ teaspoon vanilla extract
  • Fresh strawberries, sliced (for garnish)

Instructions
 

Prepare the Dough:

  • In a large mixing bowl, combine the warm milk and active dry yeast. Let sit for 5 minutes until frothy.
  • Add the granulated sugar, melted butter, and eggs to the yeast mixture. Mix until well combined.
  • Gradually add the flour and salt, mixing until a soft dough forms.
  • Knead the dough on a lightly floured surface for about 5-7 minutes, or until smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel, and let rise in a warm place for about 1 hour, or until doubled in size.

Prepare the Filling:

  • In a medium bowl, mix the softened cream cheese and granulated sugar until smooth and creamy.
  • Gently warm the strawberry preserves to make them easier to spread.

Assemble the Rolls:

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • On a lightly floured surface, roll out the risen dough into a large rectangle, about ¼-inch thick.
  • Spread the cream cheese mixture evenly over the dough, followed by the strawberry preserves. Sprinkle the ground cinnamon on top.
  • Starting from the long side, tightly roll up the dough into a log. Cut into 12 equal slices.
  • Place the rolls in the prepared baking dish. Cover with a clean kitchen towel and let rise for another 30 minutes.

Bake the Rolls:

  • Bake in the preheated oven for 25-30 minutes, or until the rolls are golden brown and cooked through.

Prepare the Topping:

  • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  • Drizzle the icing over the warm rolls.
