This Spinach Mushroom Orzo is a creamy, flavour-packed dish made in one pot. With tender mushrooms, fresh spinach, and orzo pasta, it's a quick, comforting meal or side ready in just 30 minutes.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • cups sliced mushrooms cremini or white
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 2 cups baby spinach
  • ¼ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Optional: ¼ cup cream or cream cheese for extra creaminess

Instructions
 

Sauté the Base:

  • Heat olive oil and butter in a large skillet. Sauté onion and garlic until fragrant, about 2 minutes.

Cook the Mushrooms:

  • Add mushrooms and cook until browned and tender, about 5 minutes.

Toast and Simmer:

  • Stir in orzo and toast for 1 minute. Add vegetable broth, bring to a boil, then reduce heat and simmer uncovered, stirring occasionally, until orzo is tender and liquid is mostly absorbed (10–12 minutes).

Stir in Spinach & Cheese:

  • Add spinach and stir until wilted. Stir in Parmesan and cream (if using). Season with salt and pepper.

Serve:

  • Serve warm, garnished with extra cheese or herbs if desired.

Notes

Make It Vegan:
Use plant-based butter and skip the cheese, or replace it with nutritional yeast.
Add Protein:
Top with grilled chicken, tofu, or shrimp for a more filling meal.
