Ingredients
  

For Spinach Mac and Cheese

  • 8 oz elbow macaroni
  • 2 cups fresh spinach chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk whole or 2%
  • 2 cups shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg optional

Instructions
 

Prepare Oven

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.

Cook Pasta

  • Cook macaroni according to package instructions until al dente. Drain and set aside.

Make Roux

  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1–2 minutes.

Make Sauce

  • Gradually whisk in milk and cook until thickened, about 5 minutes.

Add Cheese

  • Stir in cheddar cheese, salt, pepper, and nutmeg until smooth.

Combine Pasta and Spinach

  • Add chopped spinach and cooked macaroni. Mix until evenly combined.

Bake Mac and Cheese

  • Transfer mixture to prepared baking dish. Bake for 20–25 minutes until bubbly and golden on top.

Rest and Serve

  • Let rest for 5 minutes before serving.
