Ingredients
  

  • 2 cups corn kernels fresh, canned, or thawed frozen
  • ½ cup crumbled cotija cheese or feta
  • ½ cup shredded cheddar cheese
  • ¼ cup mayonnaise
  • ¼ cup chopped green onions
  • 1 jalapeño finely chopped
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup all-purpose flour
  • 1 large egg beaten
  • Oil for greasing or spraying

Instructions
 

Preheat Oven:

  • Preheat oven to 375°F (190°C). Grease or line a mini muffin tin.

Mix Ingredients:

  • In a large bowl, combine corn, cotija, cheddar, mayo, green onions, jalapeño, and all spices. Stir in flour and beaten egg until fully combined.

Scoop into Pan:

  • Spoon mixture evenly into mini muffin cups, pressing gently to pack.

Bake:

  • Bake for 15–18 minutes, or until golden and set. Let cool 5 minutes before removing.

Cool & Serve:

  • Serve warm with lime wedges, sour cream, or a sprinkle of Tajín.

Notes

Make Ahead:
Mix the filling up to a day ahead and refrigerate. Bake just before serving.

Add cooked bacon bits or hot sauce for extra spice and flavour.
