This spicy cucumber salad has completely taken over my kitchen and honestly, I cannot stop making it. The smashing technique creates rough, irregular surfaces that soak up the dressing in a way that cleanly sliced cucumbers simply cannot achieve. It is simultaneously crunchy, refreshing, spicy, tangy, and deeply savory - I have stood at my counter and eaten an entire bowl before dinner was ready with absolutely no regret.

Ingredients
  

  • 2 pounds English cucumbers or regular cucumbers about 4-5 medium cucumbers
  • 3 tablespoons chili crisp oil plus extra flakes for serving
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 4 cloves garlic minced finely
  • 1 teaspoon sugar
  • 2 tablespoons toasted sesame seeds for garnish

Instructions
 

  • Wash the cucumbers thoroughly and pat them dry. Place each cucumber on a cutting board and use the flat side of a large knife or the bottom of a heavy glass to smash the entire length of the cucumber with firm, even pressure. This creates rough, irregular surfaces that will absorb the dressing beautifully. Once smashed, cut the cucumbers into bite-sized chunks or leave them in longer pieces if preferred.
  • In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and sugar until well combined. Add the minced garlic and stir to incorporate. Taste and adjust the seasonings as needed - you want a balance of spicy, tangy, and savory flavors.
  • Place the smashed cucumber pieces in a large serving bowl. Pour the dressing over the cucumbers and gently toss to coat evenly, being careful not to break apart the pieces too much. The craggy edges should be well coated with the dressing.
  • Drizzle the chili crisp oil over the top of the salad and gently fold it in, reserving some to scatter over the surface for garnish. The chili crisp adds both heat and incredible depth of flavor.
  • Let the salad sit for 5-10 minutes before serving to allow the flavors to meld together. This resting time helps the cucumbers soften slightly while maintaining their crunch.
  • Just before serving, sprinkle the toasted sesame seeds and additional chili flakes over the top. Serve immediately and enjoy this addictive, refreshing, and spicy creation. It pairs wonderfully alongside grilled proteins or as part of an Asian-inspired meal.
