2 tablespoons olive oil 1 medium sweet potato peeled and diced 1 small onion diced 1 red bell pepper diced 2 cloves garlic minced 1 teaspoon chili powder 1 teaspoon cumin ½ teaspoon smoked paprika Salt and pepper to taste 1 can 15 oz black beans, drained and rinsed 1 cup cooked rice white, brown, or cauliflower rice ½ cup corn optional ¼ cup chopped fresh cilantro Optional toppings: avocado slices lime wedges, shredded cheese
