SOUTHWEST PASTA SALAD

I absolutely love making this Southwest Pasta Salad for gatherings because it comes together so quickly and always impresses guests with its vibrant colors and bold flavors. The combination of sweet corn, black beans, and fresh vegetables with a zesty dressing makes it my go-to dish for potlucks and summer barbecues. Every bite delivers the perfect balance of textures and tastes that keeps everyone coming back for more.

Ingredients
  

For the Salad

  • 1 pound rotini or fusilli pasta use whole wheat for extra nutrition
  • 1.5 cups fresh corn kernels fresh or frozen and thawed
  • 1 can (15 oz) black beans drained and rinsed
  • 1.5 cups red bell peppers diced into small pieces
  • 1 cup cherry tomatoes halved
  • ½ cup green onions thinly sliced
  • ¼ cup fresh cilantro chopped, optional but recommended

For the Dressing

  • ¼ cup extra virgin olive oil
  • 3 tablespoons lime juice freshly squeezed
  • 1 tablespoon red wine vinegar
  • 1 teaspoon cumin ground
  • ½ teaspoon chili powder
  • 1 clove garlic minced
  • ¼ teaspoon salt
  • teaspoon black pepper

Instructions
 

Prepare and Cook

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente, usually 8-10 minutes. Drain in a colander and rinse with cold water to stop the cooking process. Transfer to a large mixing bowl.
  • While the pasta cooks, prepare all the vegetables. Dice the red bell peppers into small bite-sized pieces, halve the cherry tomatoes, slice the green onions, and chop the cilantro if using. Set aside.
  • In a small bowl, whisk together the dressing ingredients: olive oil, lime juice, red wine vinegar, cumin, chili powder, minced garlic, salt, and black pepper. Mix until well combined and emulsified.

Assemble and Finish

  • Add the cooled pasta to the large bowl with the corn kernels, drained black beans, diced red peppers, halved tomatoes, sliced green onions, and cilantro. Toss gently to combine all ingredients.
  • Pour the dressing over the pasta and vegetable mixture. Toss thoroughly until every piece of pasta and vegetable is evenly coated with the dressing. Taste and adjust seasonings if needed.
  • Refrigerate for at least 1 hour before serving to allow the flavors to meld together. Give it a gentle stir before serving. The salad can be enjoyed chilled or at room temperature.

Notes

Tip: Cook the pasta one day ahead and refrigerate to save time on serving day. Storage: Keep in an airtight container in the refrigerator for up to 3 days. The salad tastes even better the next day as flavors meld together. Variation: Substitute black beans with kidney beans or add diced avocado just before serving to prevent browning.
