Ingredients
  

  • 3 cups all-purpose flour
  • ¾ cup brown sugar packed
  • ¾ cup unsulphured molasses
  • ¾ cup unsalted butter softened
  • 1 large egg
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Icing and candies for decoration optional

Instructions
 

Cream Butter and Sugar:

  • In a large bowl, beat butter and brown sugar until light and fluffy. Add egg and molasses, mixing well.

Mix Dry Ingredients:

  • In a separate bowl, whisk together flour, baking soda, salt, and spices.

Combine Mixtures:

  • Gradually add dry ingredients to the wet ingredients until a dough forms. Divide and wrap dough in plastic wrap. Chill for 1 hour.

Roll and Cut:

  • Preheat oven to 350°F (175°C). Roll dough on a floured surface to ¼-inch thickness. Cut into gingerbread men using cookie cutters.

Bake:

  • Place cookies on parchment-lined baking sheets. Bake for 8–10 minutes or until edges are firm. Let cool on the pan for 5 minutes before transferring to a wire rack.

Decorate (Optional):

  • Once cool, decorate with icing and candies.
