Smashed potatoes are crispy on the outside and tender inside. Easy to make, these flavorful potatoes are perfect as a side dish for any meal or a tasty snack.

Ingredients
  

  • 1.5 lbs small potatoes baby Yukon Gold or red potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or thyme optional
  • Salt and pepper to taste
  • Fresh parsley chopped (optional for garnish)

Instructions
 

Boil Potatoes:

  • Place potatoes in a pot, cover with water, and boil until tender (about 15 minutes). Drain and let cool slightly.

Preheat Oven:

  • Heat oven to 450°F (230°C). Line a baking sheet with parchment paper or foil.

Smash Potatoes:

  • Place potatoes on the baking sheet. Use a fork or potato masher to gently press down and flatten each potato to about ½-inch thickness.

Season:

  • Drizzle olive oil over potatoes. Sprinkle garlic powder, rosemary (if using), salt, and pepper evenly.

Bake:

  • Roast in the oven for 20-25 minutes until potatoes are golden and crispy on the edges.

Serve:

  • Garnish with fresh parsley if desired and serve warm.

Notes

  • Variations: Add grated Parmesan cheese or chili flakes before baking for extra flavor.
  • Make Ahead: Boil potatoes a day in advance and refrigerate, then smash and bake when ready.
