Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 6 slices provolone cheese
  • 6 hoagie rolls or sandwich buns

Instructions
 

Layer ingredients:

  • In the slow cooker, place chicken breasts. Top with sliced peppers, onions, and garlic. Drizzle with olive oil and sprinkle with Italian seasoning, salt, and pepper.

Cook:

  • Cover and cook on low for 5–6 hours or on high for 2½–3 hours, until the chicken is cooked through and easily shreddable.

Shred and stir:

  • Shred the chicken directly in the slow cooker and mix with the juices and vegetables.

Assemble sandwiches:

  • Toast hoagie rolls if desired. Spoon chicken mixture onto each roll and top with provolone cheese. Place under broiler for 1–2 minutes to melt the cheese.

Serve:

  • Serve warm with chips, pickles, or a simple side salad.

Notes

  • Customise it: Add mushrooms or swap in pepper jack for a spicy twist.
  • Low-carb option: Serve over lettuce or in a low-carb wrap instead of bread.
  • Make ahead: Chicken mixture can be made ahead and refrigerated for up to 3 days or frozen for up to 3 months.
