Ingredients
  

Ingredients:

  • 6 cups potatoes peeled and diced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooked bacon for topping
  • Shredded cheddar cheese for topping
  • Green onions for garnish

Instructions
 

Add Ingredients:

  • Add potatoes, onion, garlic, chicken broth, Cajun seasoning, paprika, salt, and pepper to the slow cooker.

Cook Soup:

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.

Blend:

  • Use an immersion blender to blend until smooth, or mash slightly for a chunky texture.

Add Cream:

  • Stir in heavy cream and cook for an additional 15 minutes.

Serve:

  • Serve hot topped with bacon, cheddar cheese, and green onions.

Notes

  • Spice Level: Adjust Cajun seasoning to taste.
  • Make It Thicker: Add shredded cheese before serving for extra creaminess.
