Prepare Ingredients: Cook shrimp if not pre-cooked and set aside. Prepare lettuce, carrots, cucumber, cilantro, and rice noodles.
Assemble Rolls: Place a small amount of lettuce, carrots, cucumber, cilantro, rice noodles, and 2–3 shrimp on the lower third of the wrapper.
Fold the sides inward, then roll tightly from the bottom to enclose the filling.
Make Ahead: Shrimp and vegetables can be prepped in advance; roll just before serving.
