Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp and set aside.
Add remaining oil to the skillet, then sauté garlic until fragrant.
Push garlic to the side and scramble the beaten eggs until cooked through.
Add chilled rice, peas, carrots, and cooked shrimp. Stir-fry for 3-4 minutes.
Add soy sauce, salt, and black pepper. Stir well to combine and heat through.
Garnish with chopped green onions and serve hot.

Variation: Add bell peppers, corn, or pineapple for extra flavor.
